Erik Millstone is an Emeritus Professor of Science Policy at the University of Sussex. He has been researching the causes and consequences of innovation and technological change in the agricultural and food sectors since the mid-1970s. He has published numerous books and papers on the scientific and policy dimensions of food safety and health risks. He has also analysed the structures and operations of the institutions responsible for setting agricultural and food policies, especially safety standards, in many contrasting jurisdictions
